When I go to a restaurant and really like what I have ordered, later I will try to make it myself at home. A few years ago, while visiting my family in Bulgaria, my dad took me to a newly opened restaurant in my little home town. The restaurant occupied an early 90s old building with yellow walls from inside and outside and was decorated with burgundy curtains. A very pleasant and cosy place. Unfortunately, I think they have now closed it. But what is left from this place, is my love for beetroot salads, and beetroot in general. A beetroot salad with mayonnaise caught my attention while I was choosing a starter. It had dill and garlic and was very tasty.
When I came back to London, I decided I should definitely try making it at home. And as I usually do, I add some more ingredients to it as experiment. I used some walnuts and I also tried it with humus which is even suitable for vegans.
Besides being very tasty, this salad is also really good for you, one counting towards your five a day. Beetroot is a rich source of antioxidants, including magnesium and Vitamin C. It helps lower blood pressure and is good against heart and liver diseases and diabetes.
Things you need:
4-5 normal size pickled beetroots.
100g mayonnaise (or humus if you are a vegan)
100g crushed walnuts
sprinkle of dill
Things to do:
Grate the beetroot in a salad bowl. Add the garlic and season with salt and dill. Mix well and then add the mayonnaise. Mix well again until the mayonnaise has been spread evenly. Add the crushed walnuts on top and serve
